TAVEL At Chateau d'Aqueria, the ageing of our Tavel wine is the object of constant attention. The palette of grape varieties is blended and aged in vats. The ageing cellar is well-equipped with temperature controlled vats. Frequent tastings, blendings anr re-blendings are naturally programmed during the ageing months before the wine is estate bottled. LIRAC RED WINE During the ageing phase of the Lirac red wines, wood is an indispensible step. At Chateau d'Aqueria, small and large oak barrels have their place. The smaller barrel is useful in the aromatic evolution of the wines, whereas the bigger ones are primordial in the role of oxygenation. The ageing in wood for the Lirac red wines lasts between 8 to 15 months, depending on the vintage and the potentiality of the product. Throughout this period, tastings are indspensible to enable the vintner to follow the course of his wines, decide on the lenght of ageing and the best moment to bottle the wines at the estate. |
